Preparing Wild Chanterelle Mushrooms

A few days ago, a friend of mine dropped off a bag of local Golden and Black Chantrelle mushrooms.  The Black Chanterelle is also known as the “Trumpet of Death”, but is safe to eat.  They can be found growing wild this time of year at the bases of trees and in forests, especially near the coast.  How to Identify Chanterelles

Chanterelles can be very delicious and are expensive (about $25 per pound), if purchased.  This is a simple recipe I used to prepare my mushrooms:

First thoroughly rinse the mushrooms and then gently dry them.

Then cut them into smaller pieces so that they will cook evenly

Heat up enough butter to thickly coat the bottom of the pan on medium-low heat

Put the mushrooms in the pan and add anything else you like.  I added chopped onion and chicken breast.

Flip the mushrooms occasionally and let it simmer for awhile.

After around 15 minutes on med-low heat my meal was ready to eat.  The Chanterelle flavors worked very well with the onion and chicken, but there are many more interesting recipes for these mushrooms.  More Chanterelle Recipes
